I would say do something classic, like an M14. Handguns can be a real toughy - a lot of little mechanical parts can get you off track, especially if you don't have great reference photos. Shotguns and rifles are pretty good to start with.

Just hang in there. I'm working on an L1A1 rifle and I keep getting stuck on sections that feel more like chores than work. But dedication is what separates the good from the bad.
